Mango Pickle

Have you ever cut into a mango and realized it is super unripe? You don’t have to throw it away! Have an adventure and make this recipe.

Mango Pickle recipe


  • Mango, green or underripe chopped into cubes
  • Sesame oil (untoasted)
  • Mustard seed
  • Garlic (optional)
  • Ginger
  • Curry leaves
  • Salt
  • Chili powder
  • Fenugreek
  • Hing
  • Turmeric

Next steps:

  • Roast 1 tsp mustard seeds in 1 tablespoon sesame oil until they pop.
  • Add chopped ginger, curry leaves and cook for 2 minutes
  • Add to taste: chilli powder, fenugreek, hing, turmeric.
  • Add salt & mango cubes.
  • Turn off the heat. Leave mango pickle in a clean glass jar for up to a week.
