Have you ever cut into a mango and realized it is super unripe? You don’t have to throw it away! Have an adventure and make this recipe.

Mango, green or underripe chopped into cubes
Sesame oil (untoasted)
Mustard seed
Garlic (optional)
Ginger
Curry leaves
Salt
chili powder
fenugreek
hing
turmeric

Roast 1tsp mustard seeds in 1 tablespoon sesame oil until they pop.
Add chopped ginger, curry leaves and cook for 2 minutes
Add to taste: chili powder, fenugreek, hing, turmeric.
Add salt & mango cubes.
Turn off heat. Leave mango pickle in clean glass jar up to a week.
